A wine cooler is not just a small refrigerator. It is built to hold a narrow, steady temperature and, on dual-zone units, two of them at once, because heat swings and vibration are what age a bottle badly. How It Holds Temperature

A thermistor reads the cabinet temperature and the control cycles the cooling to hold your setpoint. Dual-zone units have two sensors and often two evaporators or a damper that splits cold air between the compartments. When a thermistor drifts out of calibration, the control chases a false reading and the real temperature wanders even though the display looks fine.
